Recipe: Summer Fruit Salad
This fresh n’ fabulous summer salad can be used in place of any lunch – or even dinner – salad on your diet plan. It’s a healthy and delicious treat that you can also make for and serve at summer parties. Bring it to every social occasion or picnic – that way you can stay on your plan and no one will worry that you’re “Not eating enough!”
Salad Ingredients:
6 cups of fresh, chopped seedless watermelon
2 cups of fresh blueberries
2 cups of fresh, sliced strawberries
2 cups of green seedless grapes (each sliced in half)
1 cup of fresh blackberries
Dressing Ingredients:
1/2 cup fresh, pure orange juice
1 tbsp. fresh or organic lemon juice
1 tsp. ground ginger
Chop and mix all ingredients as close to serving time as possible (that way the fruit will stay crisp). Store in freezer for 1/2 hour before serving. Just before putting it out for guests (or for yourself), toss dressing and mix with fruit, then serve.
Makes 8 servings.
(Be sure to pay attention to serving size if you’re on any kind of diet plan.)
Recipe: Watermelon Slushie
Who can resist the wholesome goodness of fresh-cut watermelon? Here’s a new way to enjoy this summer treat – without the “cheat.”
Ingredients:
1 Frozen Banana (cut into chunks)
2 cups Watermelon Chunks (seeded)
1 cup Ice Cubes (cracked or slightly crushed)
1/2 cup of fresh Orange Juice
Directions:
Combine all ingredients in a blender, then blend until smooth (approximately 20-60 seconds). Serve immediately in chilled glasses. Add a small slice of watermelon or a Strawberry as a garnish – and don’t forget the straw! (Serves 2)
